Naked Eggs in Purgatory

Call it Eggs in Purgatory, Huevos, Uova in Brodetto, it all means the same thing…eggs in tomato sauce. And for us it is not just any tomato sauce, it has to be The Naked Baking Ladies Simply Marinara Sauce. Add some farm fresh eggs and fresh rainbow swiss chard, fingerling potatoes and Cipollinis and you have created a feast out of the most down-to-earth ingredients-simply delicious!

3 lbs small fingerling potatoes

6 Cipollini onions, peeled and cut in half

4 cups of rainbow swiss chard, chopped or torn in bite size pieces

Salt and Pepper to taste


Coat a 13 x 9 roasting pan with olive oil and toss in potatoes and onions. Sprinkle with salt and pepper and roast for about 20 minutes or until potatoes and onions start to brown start to brown. Mix in chopped swiss chard and pour 24 oz. jar of Naked Baking Ladies Simply Marinara Sauce and cook for 8 minutes. When sauce is heated crack six eggs directly on the sauce mixture and return to oven until eggs are cooked to your liking.
