The Naked Mirepoix

Ok..I know what you are thinking…a mirepoix is not a recipe…For those of us who know food we realize Mirepoix is a french term meaning a culinary flavor base containing vegetables and such. In traditional French cooking it is a mixture of onions, carrots and celery although there are many different versions. In Italian, it is soffritto and contains garlic, celery and carrots, in German, it is suppengrun, (insert : over the u) and it is made up of leeks, carrots and celery but no matter how, or where you dice, chop or slice it, a mirepoix is a flavor foundation for your recipe. And at the Naked Baking Ladies it just makes sense to begin with a Naked Mirepoix. The Naked Baking Ladies mirepoix is a powerful trio of garlic, ginger root and turmeric root. Individually these spices and vegetables (yes, garlic is technically a vegetable however you do not lose points if you call it a spice, only if you do not eat it) contain a multitude of healing properties, and together they transform into a nutritional powerhouse. So call it whatever you want, just use it often! Your body will thank you!

10 cloves of garlic

½ of a large root of ginger

2 large roots turmeric

Directions

Peel the garlic, ginger root and turmeric root. The most benefits come from breaking down the cell wall of these ingredients so feel free to use a garlic press for the garlic and then chop the ginger root and turmeric root by hand, or throw everything in a food processor and pulse until finely diced. You need store it in the refrigerator and it will stay fresh up to 5 days to use in sauce, soups, salad dressing, etc. ~basically anything and everything!
